🍓 Ingredients:

  • 1 egg
  • ½ cup plain Greek yogurt (or coconut yogurt)
  • 1 ripe banana, mashed
  • ¼ cup milk of choice
  • 1 tsp vanilla extract
  • ½ cup quick oats or oat flour
  • 1 scoop vanilla protein powder
  • ½ tsp baking powder
  • ½ cup fresh or frozen raspberries
  • Optional: white choc chips or chopped nuts

👩🍳 Method:

  1. Preheat oven to 180°C (350°F).
  2. In your zi&co silicone lunch box, mash banana and mix in the egg, yogurt, milk, and vanilla.
  3. Add oats, protein powder, and baking powder. Mix until smooth.
  4. Fold in raspberries and optional extras.
  5. Bake on a tray for 20–22 minutes or until golden and firm.
